Maurice Salad

This was the popular salad offered at Hudson's Department Store in Detroit.

  • 2 tsp. White Vinegar
  • 1½ tsp. Lemon Juice
  • 1½ trp. Onion Juice
  • 1½ tsp. Sugar
  • 1½ tsp. Dijon Mustard
  • ¼ tsp. Dry Mustard
  • 2 Tbsps. Parsley, fresh, chopped (`)
  • 1 Egg, hard cooked, diced
  • 14 oz. Ham, cut into strips
  • 14 oz. Turkey breast, cut into strips
  • 14 oz. Swiss Cheese, cut into strips
  • ½ cup Sweet Gherkin Pickles, slivered
  • 1 head Iceberg Lettuce, shredded
  • 12-16 each Pimento Stuffed Green Olives
  1. Combine the vinegar, lemon juice, onion juice, sugar, Dijon mustard and dry mustard; stir to dissolve the sugar. Add the parsley and chopped egg; mix well.

  2. Combine ham, turkey, cheese, and pickles together in a large bowl. Toss together with the dressing.

  3. Divide the lettuce among the plates, top with salad and garnish each plate with chopped two olives
